Cooking in Gascony: Enough to spark a lifelong love affair

We completely agree and part of the appeal of a holiday with Simply Gascony is the opportunity to shop for really fresh ingredients in the markets, cook simple, wonderful meals and then enjoy eating them with your family and friends, accompanied by one of the many excellent local wines. To help you do this, we will recommend local markets, shops and restaurants close to your rental property, and many of our properties can provide a local cook, either to prepare meals or to provide a full chef service.



And now we can do more! We have joined up with the well-known Gascony Cookery School to give you the opportunity to join their Cookery Courses or, if you want, to have someone from the School to come and cook or give a demonstration in your holiday property.

THE GASCONY COOKERY SCHOOL

Located since 2002 in Gramont, close to a number of our Simply Gascony properties, The Gascony Cookery School offers the combined knowledge and experience of two professional chefs of French cuisine, one French and one English. These French cookery courses are not only thorough, practical and accessible to all, but also very enjoyable.


Gascony has a famous gastronomic repertoire. Home to duck, foie gras, cassoulet, really fresh vegetables, wonderful garlic, farm made cheeses and patés, fine Armagnac and good wine, Gascony's culinary prestige is long established. Gascony wine-making reputation (older than that of Bordeaux) is now enjoying a very well-deserved revival. In Gascony you can find really good, authentic country wines, made with local grape varieties, at prices you won't believe!


David and Vikki Chance joined forces with Bernard Corbière, who has owned a successful restaurant in Gramont (Le Petit Feuillant) for over twenty-five years, to set up The Gascony Cookery School. They believe that cooking French food should be enjoyable and accessible for all, which means that a cookery course at The Gascony Cookery School is a unique, memorable experience - and one that you can combine perfectly with a holiday in Gascony arranged for you by Simply Gascony.

RECIPE OF THE MONTH



Each month we will be publishing in Gascony Life and on social media a new recipe from The Gascony Cookery School. These recipes are designed for visitors to Gascony who want to take advantage of the seasonal ingredients available in the markets and shops to enjoy cooking and eating delicious French Food while on holiday.

This month's recipe is:

BERNARD'S GASCON GARLIC SOUP (SOUPE À L’AIL)

Ingredients: 3 tbsp olive oil 1 head of garlic, peel and slice cloves 1 litre chicken stock 1 baguette sliced Half tsp dried thyme

Method: Sauté garlic in the oil in a medium saucepan over a low heat until tender (around 7 - 10 mins) then transfer onto a plate. Fry the baguette slices in the pan until golden brown on each side. Transfer 2 baguette slices into each bowl. Place the garlic back into the saucepan and add the chicken stock and thyme, simmer for 5 minutes. Season to taste. Ladle the soup over the toasted bread and serve immediately.
